Wolf The Willows Gluten Reduced Beers
We now use Brewers Clarex in 4 of our beers, Crisp Lager, XPA, IPA and Woodsman Amber Ale, with all test results coming in UNDER 10 ppm (parts per million).
Every XPA, IPA, LAGER and WOODSMAN with a best before date of 2025 or later (packaged 2024) has clarex, so is gluten reduced.

International version
Brewers Clarex® (also used to reduce the chill haze in beer). This protease enzyme degrades the gluten to levels below the 20 ppm threshold so it can be labelled gluten free (in the UK).

Australian/NZ version
Australia has the strictest legislation in regard to ‘gluten free’ claims, with no detectable gluten being the only acceptable result. Countries such as the USA, the UK and the EU whose regulations allow gluten free products to contain up to 20ppm of gluten.
